This week I decided to go with the very easy, accessible, delicious acorn squash.    The idea was to prepare the squash so that the children in the house would try it and even enjoy so I left the brown sugar in as indicated by the recipe.    As soon as it began to cook in the oven the house smelled incredible.  Definite bonus, give it a try.

ingredients                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                  1 acorn squash

2T softened butter

2T brown sugar

2T maple syrup (real syrup, organic if possible)


preheat oven to 400 degrees

cut squash in half, carefully

scoop out the seeds + place on baking sheet cut side up

place 1/2 of the softened butter, brown sugar and maple syrup in each half

bake for 1 hour + enjoy

  here is a picture of my finished product.  I needed to taste it right away and I think the smell lured one child into the kitchen.  The other one skeptically asked ‘how is it?’ after her first few bites and when it was a positive response he hesitated, thinking maybe I should try this but just like that he was off again.  I’ll get him next time.

Warm, wholesome, filling and seasonal.  A good choice as the chilly Fall air creeps in.
