I’ve shared this recipe with so many people, thought I’d share it here as well.  It is truly one of my favorites, especially in this cold winter weather.  This dish fills the belly, warms the soul and it is good for your body as well.

1/3 cup brown rice

1/2 cup black beans

drizzle with taco sauce or  salsa and mix together

mix in 1/4 cup of your cheese of choice

allow the cheese to melt then top with

chopped tomato and avocado

YUM !  

Of course, this rice and beans combination could have many different variations depending on your likes/dislikes.   Experiment and let me know what works for you.
